Zuccini Lasagna
Ingredients Needed:
3 Zuccinni sliced round-ways (less or more compared to the size you need)
1 Can diced tomatos (or fresh if you have the time)
Bag of Mozzarella Cheese
Fresh Spinach
1 jar of Alfredo Sauce
1 jar of Spaghetti Sauce
Mushrooms
1lb of Ground Turkey (or beef, whichever you prefer)-I might also suggest Italian Sausage
White Onion
Green Pepper

First start by pre-heating your oven to 400 degrees. Then brown your ground meat season with Italian seasoning, garlic salt. After you drain the fat from the meat, toss in chopped onion and green pepper. Sautee that all together. After that is browned, pour into a sauce pan 1 jar of alfredo and 1/2 jar of spaghetti sauce. Bring to a simmer on the stove top. While that is heating layer in the bottom of a casserole dish sliced zuccini. Pour part of the sauce mixture ontop of the zuccini. Then layer spinach, mushrooms, mozzarella cheese, more sauce, another layer of zuccini. Continue to layer , top with sauce/meat then more mozzarella cheese, cover with foil and place in oven (I am not sure if covering with the foil caused the soupi-ness of it but thats how I did it). I cooked this for 30 minutes at 400 degrees. Then removed the foil and added more mozzarella cheese to the top. Cooked for an additional 10 minutes and then placed under the broiler to brown up the cheese.
This yummy dinner was paired with some homemade garlic bread (aka: white bread, butter, garlic salt and parmasean cheese, under the broiler for 3 minutes). It was a big hit! I think if I had to do it over again I would have used Italian Sausage instead of ground turkey/beef, just for a pure taste standpoint. And I would try and use cottage cheese or ricotta in the middle. This was actually pretty light compared to what it looks like. No pasta either! Little Spooner loved it too... Daddy Spooner is not a huge fan of red sauce, thats why I primarily used alfredo.
