Yummy Salsa

We celebrated new years eve out in Erie with some family. My cousin Amy made this amazing bean salsa. It is so amazing that I literally went out and bought all the stuff immediately. it is eaten most easily with scoop tortilla chips.
Here it is...
1 can each of the following- black beans, pinto beans, garbanzo beans, and shoe peg corn (drain them)
1 small onion chopped
Celery. (I bought a small package of pre-chopped onions and celery)
I used about 3/4ths of a green pepper chopped (you can add red pepper too if you'd like)
A bunch of cilantro
For the sauce/dressing:
1/2 cup of canola oil
1/2 cup cider vinegar
1 cup of sugar
1 tablespoon of water add pepper to taste
Heat up sauce ingredients and stir until sugar is dissolved. Let sauce cool then pour over bean mixture.
Let sit for 24 hours for optimum flavor! It looks really pretty too. You MUST go make it now!!!
